So I was talking to a friend today and we were chatting about pasta (who doesn't love it? lol). She said she read somewhere that eating pasta "al dente" can help with weight loss or something, so of course I HAD to go look it up, never heard of this! And what I found was pretty interesting!
First, al dente pasta has a lower glycemic index than overcooked pasta, this means that there is a slower rate of digestion and absorption of the foods carbohydrates. That is GOOD because it will give you a slow, steady supply of fuel while allowing your blood sugar levels to stay constant, which helps you stay fuller longer. Of course you should choose whole grain pasta, they make some pretty yummy kinds now!
I also found this pretty interesting too, what the Italians believe....
"They believe that eating pasta al dente is healthier for the digestive system than squishy, overcooked mush that sits heavy in the abdomen and makes you feel sluggish. When pasta is overcooked, it means it has absorbed its maximum amount of liquid. Pasta cooked al dente, on the other hand, can still absorb more during the digestive process and therefore digests more easily."
